Simple Fish Soup
This simple fish soup recipe is perfect for a week-night meal. It’s low carb, paleo, whole30 and super simple to make. Use whatever fish you have on hand – except perhaps canned tuna. Don’t use that 🙂

Ingredients

  1. Add the garlic, onions and olive oil to a large pot and stir until onions start to caramelize.
  2. Next add the celery, carrots and potatoes, thyme and stir for 5 minutes.
  3. Add soup stock, canned tomatoes and pasta sauce. Keep stirring.
  4. Cook for 10 minutes or until the potatoes are almost tender. Add the fish and shrimp. Note – if you’re using pre-cooked shrimp, defrost them first and add them at the last minute until they are fully heated.
  5. Cook for 5 to 7 minutes longer or until fish looks cooked.
  6. Remove from heat, portion in 4 bowls and garnish with cilantro.
