These are some of the best gluten-free muffins I’ve ever tasted!
I made these muffins this weekend as I still have so much almond and coconut flour left over from my days with Procakes. I am sure this stuff will go bad eventually, but for now, it still tastes fine, 3 years later!
These would make a perfect grab and go option for work. Have them for breakfast or with coffee at 10 am. I don’t think they are dry at all, but if you think they are, or if they get a little stale, you can chop them into big chunks and toss them with some berries and yogurt!
This is a perfect snack for those of you on lower carb diets that still want that bread-like fix (I feel ya!).
BTW, I use xylitol to sweeten. I love using this as an alternative to real sugar, honey or anything else that might spike insulin. Just don’t feed it to your dog as Xylitol is toxic for them (but fine for us).
