Creamy Brocoli Soup Recipe – Keto, Paleo & Low Carb
You can make this as chunky or smooth as you like based on how much you blend it at the end. I like having a good amount of chunkiness to my soup, so I don’t over blend. This recipe is low carb, keto, and paleo and it’s also super simple to make while still being incredibly healthy. Enjoy!

Chop onion, carrot, celery, and broccoli (if you’re not using pre-cut florets) In a large pot, add the coconut oil, onion and garlic over medium heat Stir for 3 minutes, then add dried basil, celery and carrots. Cook for 5 more minutes Add the soup stock and broccoli and let it simmer for 15 minutes. Turn off heat and add coconut milk Using a hand blender, blend to desired texture Add salt + pepper to taste. Serve hot and enjoy!
